Abstract

Introduction: Minas Frescal cheese is a type of fresh and nutritious cheese that has great popularity and tradition in Brazil. However, its extensive handling makes it vulnerable to bacterial contamination, posing risks to food safety and public health. Among the main pathogenic agents found in this food, Staphylococcus aureus stands out, a bacterium with a notable ability to develop antibiotic resistance. Objective: This study aims to analyze the presence of Staphylococcus aureus and determine the antimicrobial resistance profile of the strains found in Minas Frescal cheese marketed in cities in southern Minas Gerais. Method: Ten samples of Minas Frescal cheese, produced and marketed in cities in the southern interior of Minas Gerais, were analyzed. The samples underwent tests for the enumeration and identification of Staphylococcus aureus. The antimicrobial susceptibility profile was determined by the disk diffusion test according to the Kirby-Bauer methodology, using cefoxitin, clindamycin, chloramphenicol, erythromycin, gentamicin, sulfamethoxazole/trimethoprim, and tetracycline. Result: Bacteria of the genus Staphylococcus sp. were found in all the samples analyzed. In 40% of these samples, the levels of S. aureus were outside the microbiological standards established by Normative Instruction 161. 97.14% of the microorganisms tested were classified as sensitive to the antibiotics tested; however, two strains of S. aureus were resistant to the antibiotic tetracycline. Conclusion: The study reveals a concerning rate of non-compliance of Minas Frescal cheese with legal standards. However, it is satisfactory to note that no MRSA or multidrug-resistant strains were detected in the antimicrobial susceptibility analyses.
