Resumen

Introducción: El queso Minas Frescal es un queso fresco y nutritivo muy popular en Brasil. Sin embargo, su alta manipulación lo hace vulnerable a la contaminación bacteriana, planteando riesgos para la seguridad alimentaria y la salud pública. Entre los patógenos presentes en este alimento destaca Staphylococcus aureus, una bacteria con capacidad para desarrollar resistencia a los antibióticos, comprometiendo la eficacia de los tratamientos. Objetivo: Este estudio tiene como objetivo analizar la presencia de Staphylococcus aureus y determinar el perfil de resistencia antimicrobiana de las cepas encontradas en el queso Minas Frescal vendido en el sur de Minas Gerais. Método: Se analizaron diez muestras de queso Minas Frescal, producido y comercializado en ciudades del sur de Minas Gerais. Las muestras fueron sometidas a pruebas para identificar Staphylococcus aureus, siguiendo los criterios de la Resolución del Consejo Colegiado N° 724 y la Instrucción Normativa N° 161. El perfil de susceptibilidad antimicrobiana se determinó mediante la prueba de difusión en disco según la metodología de Kirby-Bauer, utilizando cefoxitina, clindamicina, cloranfenicol, eritromicina, gentamicina, sulfametoxazol/trimetoprima y tetraciclina. Resultado: Staphylococcus sp. se encontró en todas las muestras, estando el 40% fuera de los estándares legales. Se identificó S. aureus en seis muestras, pero ninguna mostró un perfil de resistencia a múltiples fármacos. Conclusión: El estudio revela un preocupante incumplimiento de las normas legales por parte del queso Minas Frescal. Sin embargo, es tranquilizador observar que no se detectaron cepas de MRSA ni multirresistentes en los análisis de susceptibilidad a los antimicrobianos.
